Meal Planning

So one of the main lessons that I have learnt during the years that I have been veggie is effective meal planning.

When I first changed my diet, I was the only vegetarian in my house and I had to cook for myself for the first time. I found that cooking meals for just one person and cooking everything myself was expensive, time-consuming, and quite difficult.

I didn’t know anybody who was vegetarian that could help me make the transition.

Being from the North of England, traditionally most meals are based around the meat and I found myself eating a lot of meat alternatives or quick and easy meals like cheese/scrambled eggs/houmous on toast. It took quite a while for me to get some vegetarian cookbooks, search the web for veggie recipes, and try to find the ones that I was able to cook well. I spent a lot of money on health food and ate a lot of cheese, which meant that my finances and my waist line were not in the best shape.

After some experimenting, I created my 5:2 method where I would eat consciously healthy loosely based on a WW diet during the week and then have a little more freedom at the weekends.
